Chocolate Chip Cookie Recipe

That first warm bite-where the golden edge gives a light crisp snap while the center stays thick, soft, and loaded with melted chocolate-is what a homemade cookie should be. For a long time, my cookies always spread too thin into greasy puddles on the tray. The breakthrough came when I stopped using cold, hard butter and switched to warm melted butter with a heavy ratio of brown sugar.

The brown sugar locks in moisture, while letting the melted butter cool slightly before mixing prevents the dough from melting into flat pancakes in the oven.

These are thick, bakery-sized cookies you can mix in one bowl with a fork in under ten minutes-no heavy stand mixer required.

Ingredients

  • ½ cup (1 stick) unsalted butter, melted and cooled for 5 minutes

  • ¾ cup packed light brown sugar

  • ¼ cup granulated white sugar

  • 1 large egg, room temperature

  • 1 ½ teaspoons pure vanilla extract

  • 1 ½ cups all-purpose flour (spooned and leveled)

  • ½ teaspoon baking soda

  • ¼ teaspoon fine salt

  • 1 cup semisweet chocolate chips (reserve 2 tablespoons for pressing on top)

Directions

  • Preheat and Prep: Start by heating your oven up to 350°F (175°C), then cover a large cookie sheet with parchment so nothing sticks.
  • Whisk Butter & Sugars: In a large mixing bowl, pour in your melted, cooled butter, brown sugar, and white sugar. Whisk vigorously by hand for 1 to 2 minutes until the mixture looks smooth, glossy, and resembles caramel.
  • Add Egg & Vanilla: Crack in the egg and add the vanilla extract. Whisk again for another 30 to 45 seconds until the mixture thickens slightly and turns pale in color.
  • Fold in the Dry Ingredients: Add the flour, baking soda, and salt. Switch to a rubber spatula or wooden spoon and gently fold the mixture together just until the flour streaks disappear-do not overmix. Fold in the chocolate chips until evenly scattered.
  • Scoop the Dough Balls: Use a large cookie scoop or a ¼-cup measuring cup to form 8 to 10 tall, round dough balls. Place them on the baking sheet leaving at least 2 to 3 inches of space between each. Press a few of your reserved chocolate chips into the top of each dough ball (this gives them that mouthwatering bakery look).
  • Bake to Perfection: Bake at 350°F for 10 to 12 minutes. You know they are ready when the edges are set and lightly golden, but the very centers still look slightly pale and soft.
  • Cool and Settle: Remove the pan from the oven and let the cookies rest undisturbed on the warm baking sheet for 10 minutes (they will firm up as they rest). Transfer to a wire rack or enjoy warm with a glass of cold milk.
