Cheeseburger Sliders Recipe

There’s an unwritten rule in my kitchen: whenever game day rolls around or friends drop by unannounced, nobody actually wants a sit-down meal. They want something hot, handheld, and unapologetically comforting.

That’s exactly how these mini cheeseburgers became a weekend staple in my house.

I used to think the secret to a great burger was piling on twenty fancy toppings, but over the years, I realized the opposite is true. The magic is in the fundamentals: a well-seared, seasoned beef patty that stays juicy in the middle, sharp melted cheddar clinging to every corner, crisp garden-fresh layers, and a buttery, golden bun holding it all together.

Best of all, they solve my biggest pet peeve with homemade burgers-the dreaded soggy bottom bun. By searing each mini patty quickly over high heat, letting the cheese melt right down the sides, and layering our fresh greens thoughtfully, every single bite stays crisp, savory, and tender.

Set a warm platter of these down in the middle of the table with some crispy potato chips, and I guarantee you won’t even have time to grab seconds before the board is completely empty.

Ingredients

  • For the Beef Patties:

  • Ground Beef (80/20 ground chuck): 1 lb / 450 g

  • Worcestershire sauce: 1 tbsp / 15 ml

  • Fine sea salt: 1 tsp / 5 g

  • Coarse freshly ground black pepper: ½ tsp / 1.5 g

  • Garlic powder: ½ tsp / 1.5 g

  • Onion powder: ½ tsp / 1.5 g

  • For the Buns & Cheese:

  • Mini slider buns (brioche or potato rolls, unseeded): 12 buns

  • Sharp or medium cheddar cheese: 6 standard slices (cut in half into 12 squares) / ~170 g

  • Unsalted butter (melted, for toasting): 2 tbsp / 30 g

  • For the Fresh Layers & Toppings:

  • Curly green leaf lettuce: 6–8 small tender leaves (torn into 24 slider-sized pieces for top and bottom layers)

  • Plum or Roma tomatoes: 2 medium (thinly sliced into 12 rounds)

  • Dill pickle chips (optional): 12–24 thin slices

  • For the Sauce & Garnish:

  • Mayonnaise: ¼ cup / 60 ml

  • Ketchup: ¼ cup / 60 ml (plus an extra teaspoon for bun dots)

  • Yellow or Dijon mustard: 1 tbsp / 15 ml

  • Presentation picks: 12 bamboo knot cocktail skewers

Directions

  • Season & Shape the Patties: In a wide mixing bowl, gently combine the ground beef, Worcestershire sauce, sea salt, black pepper, garlic powder, and onion powder. Mix with your fingers just until incorporated-do not over-knead. Divide into 12 equal portions (about 1.3 oz / 38 g each) and shape into flat discs roughly ½-inch wider than your slider buns. Use your thumb to press a shallow dimple in the center of each patty (this keeps them completely flat as they sear instead of bulging into round meatballs).
  • Toast the Buns: Brush the cut sides of your slider buns with melted butter. Place them cut-side down in a dry skillet over medium heat for 2–3 minutes until lightly golden and crisp. Transfer to your serving board. (Toasting creates a protective crust that keeps sauces from soaking through).
  • Sear the Patties: Heat a large heavy-bottom skillet or cast-iron pan over medium-high heat with a light brush of oil. Once smoking hot, place the patties in the pan in batches (avoid crowding). Sear undisturbed for 2½ minutes until a deep brown crust develops.
  • Flip & Steam-Melt the Cheese: Flip the patties. Immediately place a square of cheddar cheese over each one. Add 1 teaspoon of water to the empty edge of the hot pan and immediately cover with a lid for 45-60 seconds. The trapped steam will melt the cheddar down the sides of the beef without overcooking the meat. Transfer the cheesy patties to a warm plate and let them rest for 2 minutes so the juices lock in.
  • Whisk the Quick Burger Sauce: While the patties rest, stir together the mayonnaise, ketchup, and yellow mustard in a small bowl until smooth.
  • Assemble the “Double-Barrier” Layers:
-Spread a teaspoon of burger sauce over each toasted bottom bun.
-Lay down a small piece of curly leaf lettuce directly on the sauce (this acts as a moisture barrier so hot meat juices never touch the bread).
-Place the warm cheesy beef patty directly over the lettuce.
-Top the cheese with a thin tomato round.
-Add a second small piece of curly green lettuce over the tomato.
Cap each slider with its top bun.
  • Garnish & Serve: Press a bamboo knot skewer straight down through the center of each slider to anchor the fresh layers. Finish by adding a single, tiny drop of ketchup to the top of each bun right at the base of the pick. Serve immediately while warm with fries or potato chips.
